Adventures in Cooking - Mom's pot roast!

I hesitate to give out this recipe because once you find out how simple it is, I won't be able to "WOW" you with my Julia Childs cooking abilities! (ha! I wish...) This is my mom's FAMOUS pot roast.  If you ever came to a Grey's girls hosted by my mom or Glee girls in Katy's case, you have tasted the roast! It is sinfully yummy and unbelievably simple to make. 



Ingredients:
1 boneless, skinless chuck roast
3 potatoes 
2 packets of French onion or just onion dip (the powder packets)
1 onion (optional- as you know Logan prefers I leave the onions out)
1 bag of baby carrots
1 Dr. Pepper (I know, shocking right?!?!) 


Peel and chop up the potatoes into tiny, bite-sized cubes



The bottom layer of the crock pot should be 1/2 of the bag of baby carrots and 1/2 of the chopped up potatoes.


Place the chuck roast on top as the 2nd layer. 


Sprinkle 2 packets of the (French) onion dip powder on top. 


The top layer should be the rest of the baby carrots and potatoes. 


Now for the secret ingredient: 1 can of Dr. Pepper! Pour the whole can on and around the roast. 


You now have 2 options:
1. Cook on HIGH for 4-5 hours
2. Cook on LOW for 8-9 hours


Ahhhh... doesn't it feel good to have dinner ALREADY cooked by the time you get home from work? Oh the joys of the crock pot! 


Now you are ready to eat! Since this already includes veggies and meat, I usually serve this with rolls and a salad. 

Voila! Dinner party anyone?
